Baked Spaghetti

1 cup chopped onion
1 cup chopped green pepper
1 Tbsp butter or margarine
1 can (28oz) tomatoes w/ liquid, cut up
1 can (4 oz) mushroom stems & pieces, drained
1 can (2-1/4 oz) sliced ripe olives, drained
2 tsp dried oregano
1 pound ground beef, browned & drained (Optional)
12 oz spaghetti, cooked and drained
2 cup (8 oz) shredded cheddar cheese
1 can (10-3/4 oz) condensed cream of mushroom soup, undiluted
1/4 cup water
1/4 cup grated parmesan cheese

In a large skillet, saute onion and green pepper in butter until tender. Add tomatoes, mushrooms, olives, and oregano. Add ground beef if desired. Simmer, uncovered, for 10 minutes. Place half of the spaghetti in a greased 9x13 baking dish. Top with half of the vegetable mixture. Sprinkle with 1 cup cheddar cheese. Repeat layers. Mix the soup and water until smooth; pour over the casserole. Bake, uncovered, at 350* for 30-35 minutes or until heated through. YIELD: 12 servings!!



PINK SHRIMP SAUCE W/CREAM

1/2 pound shrimp (halved-length wise)
1/2 cup olive oil
1 package of Linguine (or preferred pasta)
2 cloves garlic
1 1/2 tablespoons tomato paste dissolved in
1/2 cup white wine
salt
pepper
1/2 cup heavy whipping cream
pasta
parsley

cook garlic in olive oil until gold. add tomato paste and wine mixture. cook 10 minutes. add shrimp, salt, pepper and boil for 2 minutes. puree some shrimp if desired, and return to pan. add cream, cook 1 minute. toss with pasta and sprinkle with parsley.

Peanut Butter Cookies

Bake 12 to 15 Min
1 3/4 cup all purpose flour
1/2 cup sugar
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup butter
1/2 cup creamy peanut butter
1/4 cup honey
1 Tblsp milk
24 small chocolate pieces

Preheat oven to 350. In a large mixing bowl combine flour, sugar, baking soda, and salt. Cut in butter and the 1/2 cup of peanut butter until mixture resembles course crumbs. Beat in honey and milk until well combined. Pat 1 tablespoon of the dough into a 2" circle. Place one piece of chocolate in the center of the circle. Shape the dough around the chocolate to form a 1.5" ball. Place on an ungreased cookie sheet. Repeat with remaining cookie dough and chocolate. Bake for 12-15 min. or until lightly browned.

CHOCOLATE YUMMY CAKE

8 oz. sour cream
1/2 cup oil
1/2 cup warm water
4 eggs
1 1/2 cups chocolate chips

mix except for chips for 5 minutes on medium. stir in chips. 350 for 1 hour

2 packages pistachio pudding (instant)
1/2 cup oil
1/2 cup milk
1/2 cup water
5 eggs
350 for 1 hour

icing:
1 package pistachio pudding
1 medium carton cool whip
1 envelope dream whip

(10) ICE CUBES

COMBINE ALL INGREDIENTS IN A BLENDER 1/2 MINUTE OR UNTIL CUBES ARE CRUSHED.

(1) CUP 8OZ FRUIT FLAVORED FROZEN YOGURT

MIX ALL INGREDIENTS IN A BLENDER UNTIL SMOOTH

Chocolate Chip Banana Bread

2 c flour
1 c sugar
1 tsp bk powder
1 tsp salt
� tsp bk soda
1 cup mashed ripe bananas
� cup shortening
2 eggs
1 cup chocolate chips
� cup walnuts chopped (optional)

Grease bottom only 9x5x3 inch loaf pan- combine all ingredients except choc chips & walnuts in large bowl. Stir in chips & nuts. Pour into pan, Bake at 350* for 60-70 minutes. Cool 10 minutes, then remove from pan.




Zucchini Bread

3 eggs- beat well
~add to eggs~
1 cup oil
2 cups sugar
2 cups grated zucchini
1 cup grated carrots
3 tsp vanilla
3 cups flour
1 tsp salt
1 tsp bk soda
2 tsp cinnamon
� cup nuts

Mix well but don't beat. Makes 2 large loaves. Bake 350* for 60-70 minutes.
